Healthy breakfast skillet, anyone? My most recent Boston Magazine recipe is up and this dish isn’t just nice to look at… it’s deliciously satisfying as well.
The recipe was inspired by my recent trip to the Phoenicia Diner nestled in the Catskill Mountains in southeastern New York. The diner serves up local, seasonal eats at their roadside location. The mountain views surrounding the diner are amazing. If you live in Boston, definitely consider spending a weekend in the Catskills to hike all of the mountains and eat all of the food.

My brunch-perfect skillet recipe features similar root vegetables, but with the eggs baked in instead of fried on top — you could do either. Sometimes cleaning eggs out of your cast iron skillet is a total pain.
