Nut Butter Balls for Snacking

What happens when you get hungry between meals? Do you reach for some kind of granola bar? Or, do you make a trip to the vending machine or cafe to grab a pick-me-up?

Cut. The. Sh*t.

These nut butter balls are super customizable, natural and are the perfect mix of carb+protein+sugar to get you to your next meal or fuel a workout. Also, they are so easy to make.

It is true that there are plenty of natural, unprocessed energy bars to stock up on — my favorites include LARABAR, RXBAR and GoMacro. But, why not save some money and make your own?

Nut Butter Balls

Servings ~8

  • 1 cup quick-cook oats, gluten free
  • 1/2 cup of plain, unsweetened nut butter
  • 1/3 cup raw honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Extra goods: ½ cup of a treat like raisins, mini chocolate chips, cacao nibs or unsweetened coconut

  1. If you nut butter is stored in the fridge and your honey is solid, melt them in a small sauce pan (or in the microwave).
  2. Combine all ingredients together in a medium-sized bowl until well-incorporated. Place the bowl in the refrigerator for 15-20 minutes to harden.
  3. Remove the bowl from the fridge and start rolling your nut butter energy balls into spheres slightly smaller than ping-pong balls. Be sure to press firmly as you roll. Pro tip: Make sure you hands aren’t too warm! If you are having trouble getting them to stick, add more nut butter or honey (1 Tbsp at a time).
  4. Store nut butter energy bites in the fridge for the week ahead. Enjoy 2-4 bites as a pre- or post-workout treat.
